In Les Baux de Provence, La Cabro d’Or welcomes its guests to an authentic Provencal farmhouse converted into a luxury hotel in the 1960’s.

    Step into the Kitchen

    In the dining room or on the terrace, restaurant guests savor the fresh and refined cuisine of Michel Hulin. His spring menu highlights steer fillet and suckling pig, local asparagus and sea scallops, squab and sundried tomatoes. Food lovers interested in discovering some of the secrets behind the dishes of La Cabro d’Or can participate in themed cooking classes that take place on Sundays, in the spring and fall. The classes begin with a cup of coffee to welcome you and end with a meal during which you sample the dishes prepared during the class.

    Duck foie gras from the Landes region, half-cooked then pressed in layers, with frothy potimarron squash and roasted chestnuts, lightly spiced citrus jelly, frosted fig sorbet

     

    Sea scallops slowly pan-roasted until golden,

    light-as-a-breeze mousse with crunchy condiments,

    diced country bacon browned in butter, Meunière style

     

    A great classic: hare à la Royale slowly braised with truffles,

    potato “spaghetti” with country bacon, porcini mushrooms and shallot confit

     

    Mango marinated in Bourbon vanilla and lime,

    luscious saffron-flavoured ganache with passion fruit, iced coconut milk
